Slow Cooker Augratin Potatoes

Potatoes! They have always been a staple in our house but they may not be the most convenient food item to prepare. One of my favorite potato dishes is augratin style but the most common form is dried and bought in a box. I have to admit that I have always been a little leary of boxed potatoes. I mean, they are convenient but fresh is always better. Especially when you can put it in a slow cooker and let it cook all day and serve the minute dinner is ready.

My husband was very hesitant to try this recipe. He like what he knows and this was a bit outside the box. We had it as a side dish where the potatoes did not have to be eaten, there was plenty of other food, but after one bite that was the first to disappear. This is a basic style in my mind but I can’t to try some new styles. What type of augratin potatoes would you like to see?

Slow Cooker Augratin Potatoes


  • 5 1/2 cups thinly sliced potatoes (7-9 russet potatoes depending on size)
  • 9 strips cooked bacon + grease
  • 1 1/2 cups Asiago, Parmesan, and Romano Cheese Blend
  • 2 1/2 cups cream
  • 1/4 teaspoon sage
  • 1/2 teaspoon basil
  • 1/2 teaspoon white pepper
  • 1 teaspoon oregano
  • 2 teaspoons granulated garlic


  1. Cook bacon and use approx 2 tablespoons of grease on sides of slow cooker. A thick greasing your slow cooker is important so the potatoes don't stick. The bacon grease gives some extra flavor but you can also use Crisco for vegetarian dishes.
  2. Peel and thinly slice 7-9 russet potatoes.
  3. Layer 1 1/2 cups potatoes in bottom of pan.
  4. Top with 3 slices crumbled bacon.
  5. Top again with 1/2 cup cheese blend.
  6. Repeat the layering 2 more times for 3 total layers.
  7. Place 1 cup of sliced potatoes on top of your layers.
  8. In medium mixing bowl, whisk together spices and cream.
  9. Slowly pour cream over potato layers.
  10. Cook on low 7-9 hours. Serve warm but let cool before eating.
