Garlic Asparagus

Asparagus is a great veggie when cooked right. I have been experimenting with it a lot lately and think I found at least one version of this recipe that my family loves. There are many different things you can do with asparagus, it is a pretty versatile veggie. Since my family loves garlic is was a no brainier to perfect a garlic asparagus recipe. This is a quick and easy way to cook asparagus on the stove top, but you can also do it in a tin foil pack on the grill (expect a bit of charring with this method) and uses only a few ingrediants.

A few side notes:

-When it comes to asparagus I prefer the skinny stalks. To me they have more favor and are faster to cook. The recipe can be used on any size asparagus you would like just note the longer cook time for bigger asparagus stalks.

-You can cut the length of the spears to any size you want, I tend to cut off the ends to remove any tough material.

-Can modify this recipe to make Lemon Pepper, Spicy, and Tuscan version. If you want the details just let me know =)

Garlic Asparagus

Ingredients

  • 3 cloves garlic
  • Olive Oil
  • Asparagus spears (about 1/2 handful per person)
  • 1/2 teaspoon granulated garlic
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 1/4 teaspoon white pepper

Instructions

  1. Peel and slice garlic cloves.
  2. Wash and cut asparagus spears to desired lengths.
  3. Mix spices together in a bowl.
  4. In an appropriately sized pan, saute the garlic cloves on low heat in about a teaspoon (or more if you like) olive oil until garlic starts to become soft and fragrant, about 3 minutes.
  5. While the garlic is sauteing, roll asparagus spears in spice blend on a plate.
  6. Once garlic is ready, add the asparagus spears and roll in pan to coat in oil. If needed add a drizzle more oil to ensure spears are coated.
  7. Turn heat to a medium-low seating and saute for 10-15 minutes for skinny spears or 25-30 minutes for larger spears, until the spears are soft and flexible.
  8. Turn heat up to medium-high for last 1-2 minutes of cooking to brown the garlic slices for a nice crunch.
