Cherry Bacon Balsamic Vinaigrette

On of the things that I am trying to do to be healthier is eat more salads. The one thing that I have a hard time with is dressings for my salads. I like variety in my dressings but most of the ones I like the most are either too high in fat content or sugars for my liking. The sugar is really the biggest issue for me. Because of this my usual go to is a balsamic vinegar and oil combo that is really pretty plain and boring. I have been bound and determined to spice up my balsamic dressings and one day my manager brought in a cherry based dressing for a pot luck that I loved! There were some added sugar to it but it inspired me to create this dressing. A cherry bacon balsamic vinaigrette! The dressing itself is easy to make and has no added sugars, the only sugar is from the cherries really.

The first time I made this dressing for my family it was a huge hit!! In fact the salad was gone before the pizza for dinner that night. I would have never believed something like that could happen. Cherry Bacon Balsamic Vinaigrette


  • 7 cloves garlic, chopped
  • 1 cup balsamic vinegar
  • 1/4 cup olive oil + 1 tablespoon
  • 1 cup fresh or thawed cherries
  • 10 pieces cooked bacon, chopped


  1. Place 1 tablespoon of olive oil in bottom of medium sauce pan and heat over medium heat.
  2. Saute chopped garlic until soft and translucent.
  3. Add balsamic vinegar, remaining olive oil, and cherries to pan.
  4. Bring to an oil and cook over medium heat for 10 minutes.
  5. Using muddler or similar tool crush and break apart cherries while cooking. This will help create the thicker texture of the dressing.
  6. If you want a smooth dressing, strain remaining cherry pieces after cooking and return dressing to pan.
  7. Add chopped bacon and cook on medium heat for another 5 minutes to mix all flavors.
  8. Allow to cool to an edible temperature and serve warm with salad.
