Did you know that May is Celiac Awareness month? I had no idea until recently and I love that idea of a month that brings to light the effects if gluten and how Celiac can dictate a lot of a person’s life. Celiac Disease impacts 3 million Americans and their families, and over 40 million people now follow a Gluten Free diet for better health and wellness. Over 43 million people are concerned in one way or another about gluten in their diets and while I personally do not have Celiac, I have friends that do and watching how careful they have to be about their food is exhausting. I do try to limit the gluten in my diet but I do not have to go out of my way to avoid it like some of my friends.
So in a world full of gluten, what is a gluten-free eater supposed to do? Besides being very well educated on foods that contain gluten, they look for foods that are gluten free or cook at home where they know there is no contamination. It’s a lot of work.
Luckily for everyone watching their gluten, most foods are being labeling as gluten free to take out some of the guesswork. The muffins come in 4 flavors: Blueberry Oat, Banana Chocolate Chip, Carrot Berry, or Chocolate. Yes, you heard that right, CHOCOLATE! The Chocolate Garden Lites are my favorite and they are a nice treat any time of day but for me, I love them after my workouts! A quick heat up in the microwave and the muffins are warm, moist, and ready to eat. I love that my chocolate muffins are full of zucchini and carrots but if I did not read that on the box, I would have never known. They are just that good.
Along with the muffins, Garden Lites is launching a line of waffles, made of veggies and gluten free. The waffles come in two flavors: Homestyle or Blueberry and are 23% veggies. That is quite the power punch and I cannot wait to find them near me. I have a feeling they will be the new morning go to in my house.
