Bacon Wrapped Stuffed Chicken

There are times that I just want to step up my  dinner game and make a more elegant dinner. I love chicken and it one of the easiest meats to use in meals, creating a stuffed chicken dinner being an easy technique. This stuffed chicken filled with chicken andouille sausage, corn, green beans. As an added bonus the whole breast is wrapped in bacon to not only help keep it together but step up the flavor game.

A few hints: A thin cut butterflied chicken breast is used for this recipe so if you don’t want to butterfly the chicken yourself, you can buy it already cut. I used chicken andouille sausage but you can use any kind you have available and use a food processor to ground if you have the link form of sausage. You can mix any veggies you want for the stuffing, just keep the volumes the same.

Bacon Wrapped Stuffed Chicken Preperations

Bacon Wrapped Stuffed Chicken


  • 1 tablespoon olive oil
  • 1.5 cups ground andouille sausage
  • 2 tablespoons chopped onion
  • 1/2 tablespoon crushed red pepper flakes
  • 1 teaspoon granulated garlic
  • 1/2 cup corn kernels
  • 1/2 cup green beans, chopped
  • 4 butterflied chicken breasts, pounded thin
  • Salt and pepper to taste
  • 9-12 strips bacon


  1. Preheat oven to 400 degrees.
  2. In medium saucepan over medium heat saute sausage, onion, red pepper flakes, garlic, and veggies until heated through and veggies tender.
  3. Turn off heat and allow to cool enough to handle.
  4. Prepare chicken breasts to be pounded thin and butterflied.
  5. Split the filling in fourths and place in center of butterflied chicken breast.
  6. Season chicken breasts with a dash of salt and as much pepper as desired.
  7. Roll the chicken breast to form a tube.
  8. Starting at one end of the chicken breast, wrap bacon tightly around the entire outside of the breast, 3-4 peices per breast, securing with toothpicks as needed.
  9. In same saute pan over medium-high heat, brown bacon on all sides of chicken breast, approx, 4 minutes per side.
  10. Place chicken rolls on baking sheet and bake 25-30 minutes until bacon is cooked.
  11. Allow to rest 10 minutes, slice and serve.
