Apple Strawberry Breakfast Bars

We’ve always been told how important breakfast is and after years of not eating breakfast I can tell you-everyone else was right, breakfast is important!

Breakfast sets the tone for your eating that day. It is important to have something filling, nutritious, and for busy parents, something quick. These Apple Strawberry Breakfast Bars (or muffins depending on how you make them) and easy to make, store well in the fridge, and can even be frozen for a quick heat-up. You get everything you need to start your day: fruit, protein, healthy carbs, and prebiotics.

An important aspect of these bars is the prebiotics. It is often overlooked how important prebiotics are in your diet for a healthy gut. An increase in bad bacteria in your gut can lead to increase weight. Apple Strawberry Breakfast Bars

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 12 bars or muffins

Serving Size: 1 bar or muffin

Ingredients

  • 2 cups cooked Multi-Grain Oatmeal (or any oatmeal of choice)
  • 1 cup diced Fuji Apples
  • 1 cup diced Strawberries
  • 1 small Zucchini (about 1/2 cup grated)
  • 1 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1 cup Egg Whites
  • 3 Tbsp Stevia
  • 2 scoops Prebiotin

Instructions

  1. Preheat Oven to 375.
  2. Cook 2 cups Oatmeal.
  3. Grate fresh zucchini and dice apples and strawberries.
  4. In large bowl mix all ingrediants together until well mixed.
  5. Lightly grease bar or muffin pan and divide mix evenly across the pan.
  6. Bake 15-20 minutes until thoroughly cooked.
  7. Let cook completely and store in the fridge for about a week or freeze until desired.
  8. If frozen, microwave for about 40 seconds to thaw and then enjoy.
